Recipes from Sandy

We did a lot of home cooking since Sandy was coming so I though I would show you what we made.This soup is amazing and you can actually get it from Olive Garden but not as healthy of course. I made this the soup the first time and loved it. Just thought I would share.
I made this dish as healthy as possible with 90% organic, with the bacon from natures promise at giant and some left over sausage out of my freezer.
Zuppa Toscana Soup (Olive Garden Copy Cat):
Ingredients
  • 1 pound Italian sausage
  • 2 large russet baking potatoes sliced in half and then in 1/4 inch slices
  • 1 large chopped onion
  • 6-8 Stripes of Bacon diced
  • 2 cloves garlic,  minced
  • 2 cups chopped kale or Swiss chard
  • 2 14.5 ounce cans chicken broth
  • 1 quart water
  • 1 1/2-2 cups of heavy whipping cream( depends on how you like your soup

Instructions


Cook bacon in a 350-degree oven for approximately 10 minutes, flip then cook for another 10 minutes  drain on paper towels and cut into slices.
Take sausage out of casings and break apart cook in a large pan on medium heat unlit brown.
Place onions, potatoes, chicken broth, water, and garlic in a pot and cook on medium heat until potatoes are done. Add sausage, bacon, salt, and pepper to taste and simmer for another 10 minutes. Turn to low heat; add kale, and cream.  Heat thoroughly and serve.


Chicken Pot Pie
I did not take a picture of the chicken pot pie so here is something kind of close.
Another night I made Chicken Pot Pie. A family favorite recipe.
2-3 chicken breasts
1 large can of cream of chicken (32 oz i believe)
1 can full of water( explained below)
2 large carrots  or a good amount of small carrots chopped
2 medium potatoes sliced
1/2 a yellow onion diced
salt (to taste)
pepper(to taste)


Bisquick ( give or take on these I just usually wing it) It should be a pancake texture
One egg
1/2 cup of milk
1 cup of Bisquick
Instructions: 
Dice chicken breast cook in a pan. Put your can of cream of chicken in to a crock pot.  Fill the can up with water and dump in the crock pot as well. Add diced carrots, onions, and potatoes. Add cooked chicken set to high and let cook for 2-3 hours, or until potatoes are soft. 
Set your oven to 400 and put your mixture in to a deep pan. Add a cup of Bisquick to a seperate bowl add an egg and your milk whisk until it is a pancake texture. You can add more or less milk or  Bisquick to the mixture to get it right. Once right put a light layer over the top of the cooked mixture. Put in the oven until the crust is golden brown
