Broccoli Quiche

🐤set your oven to 350* 🐤slice up 2 medium cooking potatoes ( no more then 1/4 inch thick) 🐤in a  bowl combine 6 eggs & 1 &1/2 cups skim milk ( or any thicker milk substitute) & 1 tbsp of corn starch---> I did skim milk and cornstarch instead of heavy whipping cream to make it healthier. 🐤whisk those three ingredients together and place sliced potatoes in the mixture 🐤while potatoes are soaking - slice up your broccoli or any other vegetable.  1/2 stalk of broccoli chopped. And 1/2 an onion🐤 Grease 9 inch baking dish 🐤now it's time to season your egg mixture. I used 1tsp of tarragon and 1 tsp fresh basil and salt and pepper 🐤layer half of your potatoes in the bottom of your pan.🐤 next layer your broccoli & onion. 🐤 add a layer of shredded cheese about a 1/2 of a cup🐤 do one more layer of potatoes to hold it all in 🐤pour over all your egg wash. 🐤 make sure your potatoes are covered or level with the wash. 🐤cover with foil or any object like we did🐤bake for one hour  or until potatoes are soft and cooked 🐤 remove cover and bake for 30-45 minutes until golden brown🐤pull out the oven and let sit for 15-20 minutes to cool🐤🐤🐤🐤🐤🐤🐤 PS when I make this again I will add a crust. Most like a cracker crust just homemade. So you could even make this in a pre made crust to make things easier.ENJOY!!!
